Chef Laurence Tan, head chef of Singapore's Michelin-starred restaurant JAG, is coming to Milaidhoo Maldives in Baa Atoll for two culinary evenings this October.
About the chef
Laurence trained at The White Rabbit in Singapore from 2016 and cooked at Tower Club before joining JAG in 2020. He rose from chef de partie to sous chef under Chef Jeremy Gillon, then took over the kitchen. JAG kept its Michelin star in 2026 under his lead. His cooking is built on precision, seasonality and respect for each ingredient.
Cooking class, 16 October
A small, hands-on class where guests learn directly from the chef and see how he thinks about ingredients, technique and flavour.
Five-course dinner, 17 October
A one-night menu served to just 16 guests:
- To begin: leek and potato croustade
- Hiramasa crudo with tomatoes and sea grapes
- Gambero Rosso with Jerusalem artichoke and cashew
- Lobster ravioli with lobster bisque
- Preserved lemon sorbet
- Tajima Wagyu MB8 tenderloin with celeriac and black autumn truffle
- Dark chocolate parfait with buckwheat ice cream and tonka bean
